The shop in Castle Street has been a butchers for over 120 years. It even had its own abattoir at the rear which sadly closed in the early 1970’s. The Cowburn family took over from the Cowman family in the late 1950’s.

Nick and Paul have built on the knowledge handed down from over 5 generations and we feel we have held a unique position in the food market, as our reputation for quality sausages has spread both far and wide.

The meat we use in our sausages is specially selected and bought fresh from local suppliers. The beef and lamb is sourced at local auctions and our pork is from outdoor reared pigs.

The legal minimum meat content for sausages is 65% in pork and 50% in beef and other varieties (some of this % can include other meats). In our sausages however PORK is PORK, BEEF is BEEF, LAMB is LAMB etc. We aim for at least 75% meat content in every variety with no extra added fat. All our sausages are perfect for freezing.
